These easy Baked Carrot Fries make the perfect healthy side for any meal! They're crispy, full of flavour and served with a delicious Paprika Garlic Aioli.
1lbcarrotswashed, dried and cut into uniform fry shape
2tbspavocado oil
1tspsweet paprika
1tspgarlic powder
1/2tspsea saltor to taste
1tspfresh thyme leaveschopped
2tbsparrowroot powder
Fresh thyme leaves and flakey sea salt for garnish
Paprika Garlic Aioli
1/2cupavocado oil mayo
2tsplemon juice
1tspdijon mustard
1-2clovesgarlicgrated
1/4tspsweet paprika
1/4tspsmoked paprika
Dash or two of cayenne powderoptional
Sea salt to taste
Instructions
Preheat oven to 425F and line two baking sheets with parchment paper.
In a large bowl, combine carrots, oil, paprika, garlic powder, salt, thyme and arrowroot. Toss well to evenly coat the carrots.
Divide the carrots between the baking sheets and spread into an even layer. Make sure you leave some room between them to allow them to get crispy.
Bake in the preheated oven for 15 minutes and then flip. Return to the oven for 5-10 minutes or until carrots are fork tender and crispy on the outside.
While the carrots bake, make the aioli. Combine all the ingredients in a bowl or wide jar and stir to combine. Taste and adjust seasoning to taste.
To serve, sprinkle carrot fries with fresh thyme leaves and flakey sea salt. Serve with the paprika garlic aioli or your favourite dip!

These fries are best enjoyed immediately, as they will lose their crispiness as they sit. If you do have leftovers, they can be reheated in the oven or air fryer.
