Easy Marinated Beets

Steamed beets marinated in apple cider vinegar and a touch of honey for a deliciously sweet and earthy side dish!

Ingredients
  

  • 1 lb beets, washed and trimmed
  • 1/4 cup raw apple cider vinegar
  • 1 tsp honey
  • Sea salt to taste
  • Extra-virgin olive oil

Instructions
 

  • Steam beets until tender, about 30-50 minutes depending on the size. Set aside until cool enough to handle. Peel and then slice or chop.
  • In a large bowl, whisk together the vinegar and honey. Add the beets, season with salt and stir to combine.
  • Let sit for at least an hour, stirring a couple of times. Taste and adjust salt if needed.
  • When ready to eat, drizzle with a little olive oil. You can eat as is, or top with fresh herbs, nuts/seeds, goat cheese, etc.

Notes

Don’t toss any leftover marinade. The beet coloured vinegar makes for a delicious salad dressing!
