Baked Peaches

Warm and juicy cinnamon baked peaches served with vanilla ice cream or greek yogurt. They make the perfect summer dessert and only take about 15 minutes to make!

As much as I love a good dessert, I tend to gravitate towards recipes that are simple to make and don’t require a lot of time. These baked peaches are just that! 

This dessert is one of my favourites to enjoy during the summertime and is a great way to  use those delicious peaches when they’re in season. All you need is a few ingredients and you can be enjoying these in around 15 minutes!

Ingredients needed: 

  • Peaches: use fresh, ripe peaches. They should be slightly soft to the touch. No need to take the skins off!
  • Butter: this gives the peaches a delicious buttery flavour. I used unsalted butter because that’s typically what I have in the fridge, but salted would also work just fine.
  • Sugar: I prefer using coconut sugar or monk fruit sweetener, but you can use any type of sugar that you have on hand. I’ve also made it plenty of times without any sugar and find it to still be delicious, however the sugar does help with caramelization. 
  • Ground cinnamon: adds some warmth and enhances the flavour of the roasted peaches. 
  • Vanilla ice cream or greek yogurt: you can definitely leave the peaches as is or slice them and add them to another dish, but I think pairing them with vanilla ice cream makes the most delicious dessert.

Baked Peaches

Ingredients
  

  • 2 ripe peaches
  • 2 tsp butter
  • 1 tsp coconut sugar or monk fruit sweetener
  • ground cinnamon, to taste
  • vanilla ice cream or greek yogurt for serving
  • optional toppings: a good quality balsamic vinegar or balsamic reduction, raw or toasted walnuts, fresh mint

Instructions
 

  • Preheat oven to 375°F. Cut peaches in half, remove the pit, and place in a baking dish cut side up.
  • Place a small piece of butter in the centre of each peach and then sprinkle with the sugar and cinnamon.
  • Bake for 10-15 minutes or until soft. Serve warm with vanilla ice cream or greek yogurt and other topping suggestions if desired. Enjoy!
