Easy Marinated Beets

Steamed beets marinated in apple cider vinegar and a touch of honey for a deliciously sweet and earthy side dish!

This marinated beet recipe is super simple and can be eaten as is, added to your favourite nourish bowls or dressed up for a delicious side dish.

My favourite way to eat them is drizzled with a good quality extra-virgin olive oil, chopped walnuts, fresh mint and some flaked sea salt. Simple, but incredibly delicious.

  • red beets
  • apple cider vinegar, raw/unpasteurized
  • honey, raw/unpasteurized
  • sea salt

Red beets get their colour from natural pigments called betalains, which have powerful antioxidant and anti-inflammatory properties. They’re a good source of fibre and important micronutrients like folate for healthy red blood cells, as well as vitamin C, potassium, and manganese.

Beets also encourage nitric oxide production, which can help improve blood flow, normalize blood pressure and can even give you a boost in the gym.

Ingredients
  

  • 1 lb beets, washed and trimmed
  • 1/4 cup raw apple cider vinegar
  • 1 tsp honey
  • Sea salt to taste

Instructions
 

  • Steam beets until tender, about 30-50 minutes depending on the size. Set aside until cool enough to handle. Peel and then slice or chop.
  • In a large bowl, whisk together the vinegar and honey. Add the beets, season with salt and stir to combine.
  • Let sit for at least an hour, stirring a couple of times. Taste and adjust salt if needed.
  • Enjoy as is, or top with extra-virgin olive oil, fresh mint, and toasted walnuts for a delicious beet salad.

Notes

  • Tip: Don’t toss any leftover marinade. The beet coloured vinegar makes for a delicious salad dressing!
