These Quick Pickled Red Onions are easy to make and only require 5 ingredients. Add to tacos, salads, sandwiches or any other dish that you want to add a pop of flavour to!
I love anything pickled, but pickled red onions are something you’ll almost always find in my fridge!
Pickling helps to tone down the onion’s sharp flavour and transforms them into the perfect tangy, crunchy condiment. They’re ridiculously easy to make and are the perfect way to add a boost of flavour and colour to your meals.
Ingredients
- Red onion: try to cut your onion as evenly as possible. Thinly sliced is best and helps to speed up the pickling process. You can use a mandolin or a chef’s knife. If using a chef’s knife, you can cut your onion in half and then slice into half-moons.
- Water: water is used as part of the brine.
- Vinegar: I prefer using a combination of apple cider vinegar and white vinegar but you can use all apple cider vinegar or all white vinegar.
- Maple syrup: maple syrup helps to tone down the acidity of the vinegar. Feel free to use honey if you’d prefer!
- Sea salt: to enhance the other flavours.
- Optional ad-ins: feel free to add other ingredients like black peppercorns, garlic cloves or sliced jalapeno for a bit of a kick!
How to make quick pickled red onions
- Make the brine. Combine the water, vinegar, maple syrup and salt to a pot and bring to a simmer. Set aside.
- Combine the red onion and brine. Add red onion to a clean glass jar and carefully pour over the hot liquid. Push the onions down to ensure they are completely covered.
- Pickle the onions. Allow to sit for at least 30 minutes before using. Once cool, secure with a lid and store in the fridge until ready to use.

Ingredients
- 1 medium red onion, thinly sliced
- 1/2 cup water
- 1/2 cup vinegar (I prefer a combination of apple cider vinegar and white vinegar)
- 1 tbsp maple syrup
- 1 tsp sea salt
- Optional: black peppercorns, garlic, sliced jalapeno, bay leaves
Instructions
- Add the water, vinegar, maple syrup and sea salt to a small pot and bring to a simmer. Remove from the heat and stir in any of the optional add-ins if desired.
- Add the red onion to a clean jar and pour the hot liquid over top. Push the onions down so they are submerged.
- Allow to sit for at least 30 minutes before using. They will get even better the longer they sit!
- Serve immediately or cover and store in the fridge for up to 2 weeks.
