Cottage cheese has definitely been having its moment. I’ll admit that I actually thought I hated it most of my life. No, I don’t think I ever actually tried it, but apparently the texture was enough to steer me clear of it. As I’ve introduced certain dairy products back into my diet and started really focusing on getting in enough protein, I decided to actually give cottage cheese a fair chance. Now I’m 100% a cottage cheese fan. 

Sure there are plenty of creative ways you can sneak cottage cheese into your meals, but sometimes sticking to something more simple is just what we need, especially when we don’t have a lot of time. 

This cottage cheese bowl is easy to make, but still packs in plenty of flavour and texture. It makes a really tasty and filling breakfast, but you could also enjoy it for a quick lunch paired with some crackers.

Health benefits of this cottage cheese bowl

Cottage cheese is a great way to get more protein into your diet, especially first thing in the morning. 1 cup of cottage cheese packs in about 28-30g of protein! 
This helps to make your meal more satiating, keeps you full for longer, and keeps you energized throughout the morning. Cottage cheese is also full of vitamins and minerals like calcium, selenium, phosphorus and B vitamins. 
 
The toppings in this bowl also pack a nutritional punch. Eggs are a good source of vitamins like A, D, E, B12 and folate. Pasture-raised eggs are richer in these vitamins, as well as Omega-3s. 
 
The kale adds some fibre and antioxidants to this bowl, while the kimchi adds a boost of probiotics that supports gut health. Avocado is also a great source of fibre, as well as monounsaturated fats. Both the fibre and fat help to slow digestion and keep you full for longer.

Ingredients
  

  • 1 cup cottage cheese
  • 1 soft, medium or hard boiled egg
  • 1/4-1/2 avocado, sliced
  • 1 large handful fresh kale, sautéed
  • 1-2 tbsp kimchi
  • Green onion, chopped
  • Sprinkle of bagel seasoning

Instructions
 

  • Add cottage cheese to a bowl.
  • Top with egg, avocado, kale and kimchi. Garnish with green onion and bagel seasoning. Enjoy!
